Was just wondering whether the GoPiGo could support two Servo Packages at the same time (to have both the sensor and camera at the same time)

Sorry but that won’t be possible with the GoPiGo. There are no more ports left to run another servo.
If you really want to use them, then there are a couple of Servo Driers available for the Raspberry Pi which you can use to run multiple Servo’s.
